Meet MALIZIA Chef: Laura Guarneri

Starting from this summer season, Laura Guarneri is on board of Malizia as Chef. We are going to meet her in this article.

Laura, aged 32 was born and brought up in Palermo, Sicily and has enjoyed gathering experience about Italian and European cuisine while travelling around Europe.

After college she worked on board a private yacht but several months ago decided to pursue her passion for cooking so she gained her professional cookery qualification at Gambero Rosso in Palermo. Learning culinary skills from her grandmother, Laura has enjoyed cooking for her family all her life. As her grandfather used to own a restaurant, she is following the family tradition.

She loves to cook Italian, especially Sicilian cuisine, and is working on extending her skills to other national dishes. Her speciality is filled pasta and vegetable dishes as well as finger food. In the summer the Sicilian vegetables are wonderful so her favourite is Pasta La Norma filled with aubergines, tomatoes, cheese and basil.

Laura loves being on the sea and the marine environment, as well as the challenges of cooking in a confined space. She is skilled at problem solving when the more demanding guests request more complex dishes. Laura’s native language is Italian but she also speaks Spanish and English very well.

Laura enjoys chatting with friendly guests and also being responsible for the whole culinary process from the purchase of ingredients to the food preparation and presentation of the dishes.
It is very different being a chef on a yacht rather than in a restaurant. She loves meeting new people, exploring new places and waking up on the sea and breathing the fresh air. This year she expects to sail around Greece and the coast of Italy including Corsica and Sardinia.

In the future she would love to have her own restaurant, perhaps to take over her grandfather’s restaurant in the mountains of Sicily. But that is a long way off, as she is enjoying her time on board MALIZIA so much right now.
